How to grade matsutake,
The classification of matsutake was initially determined by the Japanese, from never opening the umbrella to fully opening it, with levels one, two, and three, as well as Ha, Hb, and so on. When exports were popular a few years ago, the matsutake level was called that.
In recent years, the Chinese market for matsutake has surged. According to Chinese customs, we classify matsutake according to size, starting at 3cm and reaching a maximum of 12cm or more. However, this classification cannot subdivide the fine quality of matsutake. Therefore, according to different customer needs, we have uniformly subdivided matsutake. You can take a look at my list, but this is only our own sorting standards. Each sorting standard is different, but generally similar, in order to provide customers with more choices.
Speaking of this classification, not every company has the strength to sort. Large factories in Yunnan with export qualifications can count them with their fingers, and only we have better export services. Only factories with a large volume of matsutake processing every year can be subdivided and ensure quality and quantity.
